Why: Celebrating birthday of this hot bitch

What: Pineapple and mint chutney that Justin and I died over.

I had to find a recipe immediately. This tasted so fresh and so clean-clean. I wanted to eat bowls of it like it was cereal. There are several versions online so I sort of cut and pasted them together to accommodate the ingredients that I already had in my kitchen.

Ingredients:

6 cups chopped pineapple
1 cup minced mint
1/2 cup finely chopped red onion
2 cloves garlic
Agave syrup to your liking

Add all ingredients in bowl, toss and let sit for at least 24 hours. You can add it to chicken or shrimp or whatever you like. I will be eating it with a spoon. Cheers!

Penne pasta with arugula and goat cheese.

I had to make something the other night for a Friendsgiving at Andy and Janelle’s at the last minute and found this online after Googling “easy potluck dishes.” Your girl knows how to internet. Anyway, I sort of changed up the recipe to fit how I wanted it.

Ingredients:

8 oz. penne pasta
1 oz. goat cheese
2 cups (appx) coarsely chopped arugula (with stems)
1 cup quartered cherry tomatoes
1/4 cup olive oil
salt and pepper
2 cloves garlic

Basically you just crumble the cheese into a bowl, add everything else and toss it. Once the pasta is done cooking, you toss that in too. It’s amazing and super tasty.
